The Balvenie distillery pioneered the concept of cask finishing. Malt Master David C. Stewart developed the now widely used process in the 1980s Balvenie 21 Years Old Madeira Cask first aged for over two decades in traditional whisky casks, lending familiar oak, honey and vanilla. A finish in Madeira wine casks has added luscious layers of exotic fruits and spices.
